Coconut Vanilla Date Creamer (Vegan & Naturally Sweetened)

We highly recommend dressing Rasa up just as you would coffee, especially with some delicious creamer. Having recently discovered a vegan, naturally-sweetened Coconut Vanilla Date Creamer, that is absolutely divine, we decided to track down the recipe so we could share it with you! It's kinda like putting vanilla ice cream in your Koffee!
Coconut Vanilla Date Creamer
2 cups almond milk
1/2 cup full-fat coconut milk from a can
1 cup of dates pitted
1 Tbsp vanilla extract
Warm almond milk in a saucepan on medium-low heat.
Add the dates and warmed almond milk to a high-speed blender or food processor. If your dates are a little dry, allow them to soak for 10 - 15 minutes so that they'll be easier to blend. Otherwise, process on high until the dates have broken down and turned into a smooth paste.
Add the coconut cream from the can, excluding coconut water, and vanilla extract, and continue processing until everything is well combined.
Transfer to an airtight container. You can run the creamer through a fine mesh strainer to ensure no bigger pieces of dates remain. Store in the fridge for up to a week. Creamer will thicken as it sits.
Blend to taste in your daily Rasa and enjoy this decadent treat!
